Hilton said its Signia-branded Naples Grande Beach Resort will reopen in with five new restaurant and bar concepts, the centerpiece of a renovation touching every one of the property's 474 guest rooms along with its dining, wellness and event spaces. The Florida Gulf Coast resort's food and beverage program will be led by Chef Asif Syed, who has been named director of culinary for the property, according to Hilton.

The five venues range from a daytime café to a beachfront bar, each built around a different slice of Naples' coastal identity. Spoonbill, named for the roseate spoonbill wading bird found in Florida's wetlands, will serve as the resort's lobby-level café and marketplace, open from morning through evening with a dedicated in-house pastry program, Hilton said. The other four concepts are Solfina Bar and Terrace, a coastal Mediterranean-style bar; Vicolo Social Club and Trattoria, offering modern Italian fare; Cocoplum Pool Bar; and Flipside Beach Bar, described by the company as a nostalgic beachfront eatery.

Hilton frames the lineup as a way to draw both hotel guests and Naples locals into the property rather than keeping dining confined to a typical resort captive audience. The venues are being positioned as standalone destinations rather than ancillary hotel outlets, spanning casual poolside and beachfront service alongside sit-down dining.

Executive frames reopening as a reset for the resort

Gary Sims, vice president and managing director of Signia Hilton Naples Grande Beach Resort, said the overhaul is meant to reset the property's role in the community. "Signia Hilton Naples Grande Beach Resort is undergoing an exciting transformation, with a reimagined culinary program designed to bring people together through moments of connection, discovery and celebration," Sims said. He added that each concept carries "its own personality and culinary point of view with a distinct sense of place, creating new ways for our guests and the local community to gather, connect and celebrate the spirit of Naples."

The culinary rollout is part of a broader renovation that Hilton describes as property-wide, covering all guest accommodations as well as wellness and gathering spaces at the resort. No pricing, menu details or opening-week programming have been released beyond the concept names and formats. Hilton has set the full reopening, including all five venues, for January 2027, meaning additional operational details are likely to surface as that date nears.
