The best street food in Amsterdam concentrates around a few reliable spots rather than the city broadly. Albert Cuypmarkt in De Pijp is the most consistent daily market, with stroopwafels made fresh to order, raw herring stands, and decent Indonesian snacks. For herring specifically, Stubbe's Haring near Centraal Station and the stands along Nieuwendijk have been serving it correctly — raw, with raw onion and pickles — for decades. Vlaardingen-style kibbeling (battered fried cod) is worth seeking at any market fish stall; skip the tourist-facing ones on Damrak.
